Truffle hunting is a comfortable way to get to know the beautiful landscape of Istra. Furthermore it is also a culinary and advanturous experience. Until recently the Istrian truffle was quite unknown on the world stage of luxury gastronomy. The traditional Istrian dishes with truffles are much too simple. But therefore nothing will disturb the taste of this great truffle in the simple dish. Right at table, right before the guest, the truffle is grated over freshly cooked pasta, Istrian fuži or gnocchi. Also an omelette, or fritaja with truffles is served in a similar way. White and black truffles
The fine white truffle the priciest among truffle. You will find it from September till January. Eat it as a traditional dish, which is usually shaved fresh over hot steaming pasta, meat or fish. Tuber Melanosporum is the fine black truffle that grows from January till spring and is regarded as the best among the black varieties. This truffle is the priciest among the black varieties. Tuber Aestivium is also a variety of the black truffle that grows throughout the year with the price lower than the Tuber Melanosporum’s. The Tuber brumale variety is also black and grows in the winter time and also less expensive than the Tuber Melanosporum.
